So I figured because one of my goals this month was to make more vegan choices, I thought I’d bring back my Vegan posts for the duration! I’m finding this a bunch easier and I’m collectively eating more vegan meals than I was last time I challenged myself to go vegan for one day a week. As I have mentioned before, I don’t want to jump in the deep end and go all out straight away because I’ve had eating disorders in the past and that sort of stuff would trigger the utter fuck out of me and I don’t want to risk it so it’s all on a very as and when basis. I was brought up veggie so it’s not super hard for me but baby steps, right?
// Houmous & Falafel Pasta //
I always make too much pasta, I can literally never make to right amount and end up making enough for about 4 other families so I’ve started running cold water over the left over pasta to cool it down, and whacking it in the fridge for lunches the next day. For this literally all I did was mixed in some houmous and falafels. Cauldron falafels are my fave and I prefer them cold so this literally took a few minutes to rustle up!
// Seeded Houmous //
I found this in Tesco and my god it is beautiful. I think it may have even overtaken good old regular houmous for me and that’s saying something!
It’s got sunflower seeds, pumpkin seeds and poppy seeds so in other words, a shit tonne of vitamins! So eating a whole pot is totally okay, right? Because that is definitely what I did, not gunna lie. You know what other houmous is amazing – sweet chilli from Asda. That stuff is amazing in pasta salads!
// Houmous & Falafel Wrap + Strawberry & Banana Smoothie //
Ordinarily this would have been nice, only the houmous tasted off despite being in date. Utter day ruiner. The falafels are the bites from Cauldron and were lovely although quite dry in comparison to their normal ones which was a bit pants.
I realise that this post is basically a love letter to houmous but I’m not even sorry. It’s basically what I have been living off for several months now and I would have it with every meal if I could.
If you don’t like houmous then we can’t be friends.
