Apricot + Honey Upside Down Loaf Cake || Recipe

This is inspired by my love for the Aldi honey and apricot split pot yoghurts, omg they are amazing. I love the combo, I think it goes so, so well and honey is my jam. I thought I’d experiment a bit with some cake flavours, just to kind of get out of my comfort zone and try something completely different, I mean, I’ve never seen an apricot + honey cake before although I’m sure someone’s definitely tried it before still. I think next time I’m going to try it in a round cake tin just because I think I could make the pattern of the apricots a lot nicer. Anyway, onto the recipe!

Apricot + Honey Upside Down Cake

ingredients

250g butter
250g caster sugar
250g sr flour
1 apricot
icing sugar
3 large eggs
4 tbsp honey
1 tsp baking powder

method

1. cream together the butter and the sugar

2. add in the eggs and then fold in the flour, 1 tbsp honey and baking powder

3. slice the apricot and lay the segments on the bottom of the cake tin and then drizzle with 1 tbsp honey

4. pour in the cake mixture on top of the apricots

5. bake in the over at 170 degrees for approx 35 minutes or until a skewer comes out clean

6. leave to cool and then turn out of the tin

7. mix icing sugar to the directions on the box and then add 1 tbsp of honey and drizzle over the top of the cake
